Although winter is my favorite season, but it always comes with a lot of problems and difficulties regarding my skin, leaving it dry, and dull. Which is not acceptable for me, and of course, no one likes this situation.
So I always like to spend the cold evenings of winter with warm and tasty foods and of course with my favorite soup, that is Golden Glow lentil soup, not only warm and healthy, it also helps to nourish my skin, and the bonus point is, it just takes 25 to 30 minutes to cook and serve. So it is also a perfect recipe for those, who can’t spend more time in the kitchen, and always look for quick and one pot meals.

How to Make Golden Glow Soup Recipe
Although Golden Glow Soup takes little time to prepare, it does take a lot of ingredients, but don’t worry. All the ingredients are easily available, mostly common kitchen ingredients, making it easy to cook the soup without any hassle.
So get started by simply gathering the ingredients. Prepare your ingredients by chopping the onion, slicing the ginger and garlic, chopping the carrots and yellow pumpkin, and preparing other ingredients for cooking.
As I mentioned earlier, the Golden Glow Soup recipe is a one pot recipe, which makes your cooking easy. So grab your soup pot, and start by preheating extra virgin olive. Then add chopped onion and minced garlic, and cook until it becomes soft and pink in color. Then add minced ginger, chopped carrots and yellow pumpkin. – Cook it for 1 to 2 minutes.
Then add the washed red lentils, spices and dried herbs along with the vegetable stock.
I always like to use my homemade vegetable stock, but if you don’t have it, you can use bouillon or soup cubes with 3 cups of water.
Mix everything, cover the lid and let the Golden Glow Soup cook on low flame for 20 to 25 minutes or until the vegetables are soft.
Smooth the texture of the soup using an immersion blender or a regular blender. And then pour the soup back into the soup pot and add coconut milk, orange juice and orange peel. Heat the soup but do not bring it to boil again.

Onion – 1 (chopped)
Garlic Cloves – 2 (minced)
Butternut Squash – 1 (peeled, seeded, and cubed)
Carrots – 2 (peeled and chopped)
Sweet potato – 1 (peeled and cubed)
Turmeric Powder – 1 teaspoon
Fresh ground ginger – 1/2 teaspoon

Ground coriander – 1/2 teaspoon
Salt and Pepper to taste
4 cups of vegetable broth
Coconut Milk – 1 can (14 oz.)
Juice of 1 orange
Zest of 1 orange
Fresh cilantro or parsley for garnish (optional)
- Take a large soup pot and heat olive oil. Add chopped onion and minced garlic and sauté for about 5 minutes or until they become soft and pink in color.
- Add cubes of butternut squash, carrots and sweet potatoes to the pot. Cook and add turmeric, ginger, cumin, and coriander and mix it well. Then add salt and pepper. Fry the vegetables for 5 minutes to absorb the spices.
- Now add vegetable broth and cook until it turns to boil. Lower the flame, cover the pot and cook on low flame for 20 to 25 minutes or until vegetables are soft.
- Use an immersion blender or regular blender to puree the soup until smooth and creamy.
- Return the pureed soup again to the pot and add coconut milk, orange juice and orange zest. Heat the soup over low heat until it is completely hot, but do not let it boil.
- Taste the soup and adjust the seasoning if necessary.
- Serve the golden glow soup hot, garnish with fresh coriander or parsley if you like.

I prefer to use homemade vegetable broth, but if you have run out of homemade vegetable stock, or want to make it quickly, you can use bouillon or soup cubes with 3 cups of water.
