Canola oil – 2 Tbsp
Celery Stalk – 1 ea. (cleaned and trimmed)
Medium onion – 1/2 ea. (peeled)
Garlic – 1 tsp. (minced)
Tomato paste – 2 cans (6 oz.)
Tomato puree – 1 can (15 1/2 oz.)
Water – 5 cups
Paprika – 1 tsp
Sugar – 3 tbsp
Salt – 2 tsp
Fresh ground pepper – 1/4 tsp
Italian seasoning – a Pinch
Lemon – 1/2 each (for juice)
- Start by preparing the vegetables. Peel the celery, carrots and onion and cut them into small pieces. Take a food processor, add the vegetables and pulse until finely pureed.
- Now take a heavy saucepan or pot. Heat the canola oil and add the carrot, onion and celery puree and cook until the vegetables are soft but not browned. This will take 5 to 7 minutes to softened the veggies.
- Add minced garlic to it and cook for 2 minutes.
- Add tomato paste and cook for 2 more minutes and mix well with the vegetables.
- Add water, tomato puree, sugar, paprika, salt, ground black pepper, lemon juice and Italian seasoning.
- Keep stirring continuously until the soup boils. Once it is cooked, reduce the flame and cook the soup on low flame for 20 minutes. During this, Stir frequently, it will help to prevent the soup from burning.
- Finally, taste the soup and adjust seasoning.
- When the soup is cooked, take it off the flame. And serve it immediately.
