Preparation
  1. Spray your slow cooker with non-stick cooking spray for easy cleanup.
  2. Place the boneless chicken breasts at the bottom of the slow cooker.
  3. In a bowl, combine the cream of chicken soup and chicken broth until smooth, then pour this mixture over the chicken.
  4. Sprinkle the stuffing mix over the chicken, ensuring it’s evenly distributed.
  5. In a skillet, melt the butter and sauté the diced onion and celery until tender.
  6. Add the sautéed vegetables to the stuffing mix, stirring gently to combine.
Cooking
  1. Cover your slow cooker and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through.
  2. Once done, shred the chicken right in the slow cooker.

Notes

Store leftovers in an airtight container for up to three days. You can freeze this dish for meal prep—simply reheat when ready. For a lighter version, use Greek yogurt in place of cream of chicken soup.
