  • 2 cups Bell peppers (any color) Swap for zucchini or mushrooms for a twist.
  • 1 medium Onion Adds sweetness when cooked.
  • 1 tablespoon Olive oil Can use avocado oil for higher smoke point.
  • 2 tablespoons Fajita seasoning Homemade or store-bought blend.
  • 8 pieces Tortillas Flour or corn; lettuce wraps for low-carb.
  • Toppings (sour cream, salsa, guacamole, cheese) For finishing touches.

Method
 

Preparation
  1. Slice the chicken breasts into thin strips and chop the bell peppers and onion into desired sizes.
  2. In a mixing bowl, combine the chicken, bell peppers, onion, olive oil, and fajita seasoning. Mix until everything is well-coated.
Cooking
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Place the mixture in the air fryer basket in a single layer and cook for 10-12 minutes, shaking halfway through.
Serving
  1. Warm the tortillas and load them up with the chicken and veggie mixture. Add your favorite toppings.

Notes

For extra spice, add diced jalapeños or a sprinkle of cayenne. Consider topping with cheese while still hot for a melty finish. Store leftovers in an airtight container frigid and reheat in the air fryer or skillet.
