Method
 

Cooking Instructions
  1. In a large pot over medium heat, cook the diced bacon until crispy.
  2. Remove the bacon with a slotted spoon, leaving the drippings. Sauté the diced onion in the bacon fat until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken or vegetable broth and bring it to a low boil. Add the gnocchi and cook according to package instructions, usually about 2–3 minutes, until they float to the top.
  4. Stir in the heavy cream and let it simmer for a few minutes to thicken slightly.
  5. Lower the heat and stir in the shredded cheddar cheese until melted.
  6. Return the crispy bacon to the pot. Season with salt and pepper to taste. Garnish with fresh chives if desired.

Notes

Add spinach or kale for a vitamin boost; use crushed red pepper flakes for a spicy kick; and add fresh thyme or rosemary for complexity.
