- In a large pot over medium heat, cook the diced bacon until crispy.
- Remove the bacon with a slotted spoon, leaving the drippings. Sauté the diced onion in the bacon fat until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken or vegetable broth and bring it to a low boil. Add the gnocchi and cook according to package instructions, usually about 2–3 minutes, until they float to the top.
- Stir in the heavy cream and let it simmer for a few minutes to thicken slightly.
- Lower the heat and stir in the shredded cheddar cheese until melted.
- Return the crispy bacon to the pot. Season with salt and pepper to taste. Garnish with fresh chives if desired.
Notes
Add spinach or kale for a vitamin boost; use crushed red pepper flakes for a spicy kick; and add fresh thyme or rosemary for complexity.
