Method
 

Cooking the Soup
  1. In a large pot, cook the bacon over medium heat until crispy. Remove and place on a paper towel to drain.
  2. In the same pot, add the diced onion. Sauté until it's translucent (about 3-4 minutes). Then, add the minced garlic.
  3. Pour in the chicken broth, scraping up any bacon bits for extra flavor. Bring everything to a gentle simmer.
  4. Add the gnocchi and cook for about 2-3 minutes, or until they float to the top.
  5. Stir in the heavy cream slowly, and let the soup become luxuriously thick.
  6. Mix in the shredded cheddar cheese, letting it melt into the soup.
  7. Finally, stir in the spinach until wilted, and season with salt and pepper to your taste.
  8. Ladle the creamy soup into bowls, crumble the crispy bacon on top, and sprinkle with a bit more cheddar if desired.
