Ingredients
  

For the Pastry
  • 1 package Puff Pastry Store-bought, found in the freezer section.
For the Filling
  • 4-6 strips Bacon Cooked until crispy; turkey or veggie bacon works as alternatives.
  • 4 large Eggs Can substitute with egg whites or plant-based scramble.
  • 1 cup Cheddar Cheese, shredded Feel free to swap for mozzarella or goat cheese.
  • 1/4 cup Milk Almond or oat milk can be used as dairy-free alternatives.
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a standard muffin tin.
  3. On a lightly floured surface, roll out the puff pastry and cut into squares.
  4. Place a puff pastry square into each muffin cup, pressing down gently.
  5. In a skillet, cook the bacon over medium heat until crispy, then set aside to cool and chop.
  6. In a bowl, whisk together eggs, milk, salt, and pepper until bubbly. Stir in crispy bacon and half of the cheese.
  7. Spoon the egg and bacon mixture into the pastry-lined muffin cups and top with remaining cheese.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until golden brown and the eggs are set.
  2. Allow to cool for a few minutes before gently removing the cups from the muffin tin.

Notes

For added flavor, customize with sautéed vegetables or use different cheeses. Store any leftovers in an airtight container for up to 3 days.
