Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with foil for easier cleanup. Place a wire rack over the tray if you have it to help the bacon crisp on all sides.
- Season the chicken cubes with smoked paprika, garlic powder, salt, and pepper, then toss until evenly coated.
- Cut each bacon slice in half crosswise. Wrap one half-slice around each chicken cube, securing it with a toothpick through the center. Arrange the bites seam-side down on the rack.
- Mix the barbecue sauce and honey in a small bowl. Brush half of the glaze over the wrapped bites before baking.
Cooking
- Bake for 12 minutes, then brush with the remaining glaze and flip each bite gently.
- Bake an additional 8–13 minutes until the bacon is crisp and chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven and let rest for 5 minutes. Serve warm.
Notes
For a party tray, brush the bites with a little extra glaze every 5 minutes in the last 10 minutes of baking for a sticky finish. Experiment with herbs or different sauces for variations.
