  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes Tender and mild, the perfect canvas.
  • 12 slices thin-cut bacon, halved Choose center-cut for a balance of fat and crisp.
  • 1 tablespoon olive oil Prevents sticking and adds subtle fruitiness.
  • 1 teaspoon smoked paprika Adds warmth and depth.
  • 1/2 teaspoon garlic powder Comforting aroma without the chopped bits.
  • 1/2 teaspoon salt Simple seasoning to let the bacon shine.
  • 1/4 teaspoon black pepper
  • 1 tablespoon brown sugar (optional) For a touch of caramelized sweetness.
  • 1 pack toothpicks For secure wrapping.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top for even crisping.
  2. Toss the chicken cubes in olive oil, smoked paprika, garlic powder, salt, and pepper. If using brown sugar, sprinkle it on now so it caramelizes during baking.
  3. Take a half-slice of bacon and wrap it around each chicken cube, securing with a toothpick.
  4. Arrange the wrapped bites on the wire rack, seam-side down to hold together while cooking.
Cooking
  1. Bake for 10–12 minutes, then flip each piece and bake another 8–10 minutes, or until the bacon is crisp and the chicken reaches 165°F (74°C).
  2. Remove from oven, let rest for 2 minutes, then optionally garnish with chopped parsley or a squeeze of lemon.

Notes

Store cooled bites in an airtight container for up to 3 days. Reheat in a 375°F (190°C) oven or air fryer. Can be frozen for up to 2 months.
