Preparation
- Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top for even crisping.
- Toss the chicken cubes in olive oil, smoked paprika, garlic powder, salt, and pepper. If using brown sugar, sprinkle it on now so it caramelizes during baking.
- Take a half-slice of bacon and wrap it around each chicken cube, securing with a toothpick.
- Arrange the wrapped bites on the wire rack, seam-side down to hold together while cooking.
Cooking
- Bake for 10–12 minutes, then flip each piece and bake another 8–10 minutes, or until the bacon is crisp and the chicken reaches 165°F (74°C).
- Remove from oven, let rest for 2 minutes, then optionally garnish with chopped parsley or a squeeze of lemon.
Notes
Store cooled bites in an airtight container for up to 3 days. Reheat in a 375°F (190°C) oven or air fryer. Can be frozen for up to 2 months.
