Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment for easy cleanup.
- Rub each chicken breast with olive oil, then season with smoked paprika, garlic powder, onion powder, salt, and pepper. If using Dijon mustard, spread a thin layer over each breast.
- Wrap each chicken breast with two slices of bacon, overlapping slightly. Secure with toothpicks if needed.
Cooking
- Optional: Sear the bacon-wrapped chicken in a skillet over medium-high heat for 1-2 minutes per side until the bacon starts to brown.
- Transfer to the prepared baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the bacon is crisp.
- For extra crispiness, broil for 1-2 minutes at the end, watching carefully to avoid burning.
- Rest the chicken for 5 minutes before slicing and garnish with fresh herbs. Serve with lemon wedges.
Notes
Use thick-cut bacon for better coverage and chew. Make-ahead by assembling and refrigerating for up to 12 hours.
