Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment for easy cleanup.
  2. Rub each chicken breast with olive oil, then season with smoked paprika, garlic powder, onion powder, salt, and pepper. If using Dijon mustard, spread a thin layer over each breast.
  3. Wrap each chicken breast with two slices of bacon, overlapping slightly. Secure with toothpicks if needed.
Cooking
  1. Optional: Sear the bacon-wrapped chicken in a skillet over medium-high heat for 1-2 minutes per side until the bacon starts to brown.
  2. Transfer to the prepared baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the bacon is crisp.
  3. For extra crispiness, broil for 1-2 minutes at the end, watching carefully to avoid burning.
  4. Rest the chicken for 5 minutes before slicing and garnish with fresh herbs. Serve with lemon wedges.

Notes
