Wet Ingredients
  • 2 large eggs Can use flax eggs for a vegan option.
  • 1 cup buttermilk Substitute with milk mixed with vinegar if necessary.
  • 0.5 cups vegetable oil Melted coconut oil can be used for a different flavor.
  • 1 cup Bailey's Irish Cream The star ingredient.
  • 2 teaspoons vanilla extract Enhances the overall depth of flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well combined.
  3. Add the eggs, buttermilk, oil, Bailey’s, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  4. Pour the batter evenly into the prepared cake pans.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once baked, let the cakes cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
Frosting
  1. Frost with your favorite chocolate or buttercream frosting, optionally infused with Bailey’s.

Notes

For variations, you can add instant coffee for a mocha twist, fold in nuts, layer with berries, or add festive decorations.
