Preparation
  1. Preheat your oven to 375°F (190°C) while you gather your ingredients.
  2. In a baking dish, spread the chopped tomatoes and spinach evenly along the bottom.
  3. Crumble the feta cheese over the top, creating little mounds of happiness.
  4. Drizzle everything with olive oil and sprinkle with minced garlic, salt, and pepper.
  5. Create little wells in the mixture for the eggs, cracking them gently into each space.
  6. Bake in the oven for about 20 minutes, or until the eggs are set to your desired doneness.
  7. Remove from the oven and let it cool for a minute before serving.

Notes

For substitutions, if you don’t have feta, you can use goat cheese, ricotta, or even a vegan cheese alternative. Feel free to make this ahead of time by preparing the tomato and spinach mixture a day in advance, then just crack in the eggs right before baking.
