- Preheat your oven to 375°F (190°C) while you gather your ingredients.
- In a baking dish, spread the chopped tomatoes and spinach evenly along the bottom.
- Crumble the feta cheese over the top, creating little mounds of happiness.
- Drizzle everything with olive oil and sprinkle with minced garlic, salt, and pepper.
- Create little wells in the mixture for the eggs, cracking them gently into each space.
- Bake in the oven for about 20 minutes, or until the eggs are set to your desired doneness.
- Remove from the oven and let it cool for a minute before serving.
Notes
For substitutions, if you don’t have feta, you can use goat cheese, ricotta, or even a vegan cheese alternative. Feel free to make this ahead of time by preparing the tomato and spinach mixture a day in advance, then just crack in the eggs right before baking.
