Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized baking dish, melt the butter, then stir in the minced garlic, oregano, salt, and black pepper.
  3. Nestle the chicken thighs in the butter-garlic mixture, ensuring they’re well-coated.
Cooking
  1. Slide the dish into the oven and bake for about 20 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  2. Take the dish out and sprinkle the shredded mozzarella evenly over the chicken.
  3. Return it to the oven for an additional 5 minutes, allowing the cheese to melt and turn light golden brown.
  4. Once done, sprinkle chopped parsley over the top for freshness and a pop of color.

Notes

Ensure the chicken rests for a few minutes after baking for juiciness. You can substitute skinless chicken thighs or chicken breasts for a leaner option. Enhance flavor with a splash of white wine or lemon juice if desired.
