Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry and place it in a large bowl. Add minced garlic, olive oil, herbs, salt, and pepper. Toss well to coat all pieces evenly.
  3. Chop the potatoes into bite-sized pieces and mix them in the same bowl with any leftover marinade until evenly coated.
Cooking
  1. Spread the chicken and potatoes in a single layer on a large baking sheet. Sprinkle extra herbs and Parmesan on top if desired.
  2. Bake in the oven for about 40-45 minutes or until the chicken is golden and cooked through.

Notes
