Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry and place it in a large bowl. Add minced garlic, olive oil, herbs, salt, and pepper. Toss well to coat all pieces evenly.
- Chop the potatoes into bite-sized pieces and mix them in the same bowl with any leftover marinade until evenly coated.
Cooking
- Spread the chicken and potatoes in a single layer on a large baking sheet. Sprinkle extra herbs and Parmesan on top if desired.
- Bake in the oven for about 40-45 minutes or until the chicken is golden and cooked through.
Serving
- Remove from the oven, let it rest for a few minutes, then serve hot.
Notes
Feel free to add seasonal vegetables to the baking sheet for an all-in-one meal, and for a spicy twist, add red pepper flakes to the garlic and oil mixture.
