  • 1 pound boneless, skinless chicken breasts cut into tenders
  • 1 cup crushed pretzels use sticks or traditional round pretzels
  • 1/2 cup all-purpose flour or almond flour for gluten-free
  • 2 large eggs
Flavor Enhancers
  • 1 tablespoon Dijon mustard adds a lovely tang
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika for a rich flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine crushed pretzels, garlic powder, onion powder, paprika, salt, and pepper.
  3. In another bowl, whisk eggs and Dijon mustard together until smooth.
  4. Coat each piece of chicken in flour, shaking off the excess. Dip it into the egg mixture, then press it into the pretzel mixture until well-coated.
  5. Line a baking sheet with parchment paper and lightly spray it with cooking spray. Place the coated tenders on the sheet, ensuring they have space between them.
Cooking
  1. Bake for 15-20 minutes until the edges turn golden brown and the chicken is cooked through.

Notes

Let the chicken rest for a few minutes after baking to keep it juicy. For a cheesy twist, sprinkle some grated Parmesan or cheddar into the pretzel breading. Add a pinch of cayenne pepper for a spicy kick.
