Method
 

Preparation
  1. Preheat the oven to 325°F (160°C). Place a kettle of water on to boil for a bain-marie.
  2. Whisk the eggs in a large bowl until pale. Add yogurt, honey or syrup, salt, vanilla, and lemon zest. Mix until smooth and glossy.
  3. Pour the mixture into a buttered 9-inch baking dish or individual ramekins.
  4. Place the dish or ramekins in a baking pan and pour boiling water into the pan until it comes halfway up the sides.
Baking
  1. Bake for 45 to 55 minutes, until the centers gently wobble but are set at the edges.
  2. Remove from the oven and let cool to room temperature, then chill for at least an hour, or serve warm.

Notes

For savory options, omit sweeteners and vanilla; stir in grated Parmesan and smoked paprika. Explore toppings like roasted stone fruit or herb oil for a festive twist.
