  • 2 cups all-purpose flour Substitute half with whole-wheat flour for a nuttier option.
  • 1 tablespoon baking powder Gives a reliable rise.

  • 1/2 teaspoon fine sea salt Balances sweetness.
  • 2/3 cup granulated sugar Reduce to 1/2 cup for lighter sweetness.
Wet Ingredients
  • 1/2 cup unsalted butter, melted and warm Adds richness; substitute coconut oil for a dairy-free option.
  • 2 large eggs, room temperature For structure and lift.
  • 1 cup buttermilk, room temperature Substitute with 1 cup milk plus 1 tablespoon lemon juice.
  • 1 teaspoon pure vanilla extract Adds warmth and depth.
Mix-ins
  • 1 1/2 cups fresh strawberries, hulled and chopped Frozen fruit can be used but toss in a tablespoon of flour.
  • Zest of 1 lemon (optional) Brightens the flavor.
  • Coarse sugar for sprinkling (optional) Gives that bakery sparkle.

Preparation
  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly mixed.
  3. In a separate bowl, whisk the melted butter, eggs, buttermilk, and vanilla until smooth and glossy.
Combining Ingredients
  1. Pour the wet ingredients into the dry ingredients and fold gently with a spatula.
  2. Fold in the chopped strawberries and lemon zest carefully.
Baking
  1. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  2. Sprinkle coarse sugar on top if desired.
  3. Bake at 400°F (200°C) for 18–22 minutes, rotating the pan halfway through until golden.
  4. Let muffins cool in the tin for 5 minutes, then transfer to a rack.

Notes

For a healthier twist, swap half the sugar for applesauce. Enjoy warm with butter or honey.
