Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Add the baking soda and salt, mixing until incorporated.
  5. Fold in the sugar, beaten egg, and vanilla extract gently.
  6. Add the all-purpose flour, folding just until the mixture is combined (don’t overmix!).
Baking
  1. Transfer the batter into your prepared loaf pan, smoothing the top.
  2. Pop the Banana Bread in the oven for 50–60 minutes, or until a toothpick inserted comes out clean.
  3. Let it rest in the pan for 10 minutes, then remove to a wire rack to cool.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. For longer storage, slice and freeze the bread, separating slices with parchment paper. Reheat in the toaster or microwave for a quick snack.
