Preparation
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin: Line it with paper liners or spray with cooking spray.
- Mash the Bananas: In a large bowl, mash the ripe bananas until they’re smooth and creamy.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Mix the Wet Ingredients: In the banana bowl, add in the melted butter, sugars, eggs, and vanilla extract. Stir until combined.
- Add Dry to Wet: Gently fold the dry mixture into the wet mixture until just combined. Be careful not to overmix!
- Fold in Chocolate Chips: Finally, gently stir in the chocolate chips.
- Scoop and Bake: Divide the batter evenly between the muffin cups, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
- Cool and Enjoy: Let cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
Notes
Consider adding chopped walnuts or pecans for added texture. Substitute half the flour with whole wheat flour for a healthier option. Add a pinch of cinnamon for spice!
