  • 1 lb Chicken Breast Use boneless, skinless chicken breasts.
  • ½ cup Cornstarch For gluten-free, opt for rice flour.
  • ¼ cup Vegetable Oil Olive oil works in a pinch but has a lower smoke point.
  • 2 cloves Garlic, minced Try shallots for a sweeter note.
  • 1 tbsp Ginger, minced Feel free to use ginger paste or powder.
  • cup Bang Bang Sauce A blend of mayonnaise, sweet chili sauce, and Sriracha. Greek yogurt can lighten things up.
  • 2 pieces Green Onions, chopped Chopped fresh cilantro can brighten the dish further.
  • 2 cups Cooked Rice Quinoa or cauliflower rice are great alternatives.

Preparation
  1. Start by washing and chopping your vegetables. Mince the garlic and ginger, then set aside.
  2. In a bowl, coat the chicken breast pieces with cornstarch, ensuring they are fully covered.
Cooking
  1. In a large skillet over medium heat, add the vegetable oil. Wait until it’s shimmering.
  2. Place the coated chicken in the skillet in a single layer. Allow them to cook for 5–6 minutes on each side until golden and cooked through.
  3. In a small bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha until smooth.
  4. Once the chicken is cooked, lower the heat, and add the garlic and ginger to the pan, stirring for about 30 seconds until fragrant.
  5. Drizzle over your Bang Bang sauce, tossing everything to coat thoroughly.
Assembly
  1. Serve the saucy chicken over a bed of warm, fluffy rice. Top with chopped green onions (or cilantro).

Notes

Try adding diced bell peppers or steamed broccoli for a pop of color and nutrition. For special occasions, consider adding toasted sesame seeds.
