  • 1 cup Panko Bread Crumbs Swappable for regular breadcrumbs.
  • 1/2 cup Flour Almond flour can be used for gluten-free option.
  • 1 large Egg For a vegan version, use flaxseed meal mixed with water.
  • 1/2 cup Bang Bang Sauce Mix of mayo, sriracha, honey, and lime juice. Adjust to personal preference.

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Cut the salmon fillet into bite-sized pieces.
  3. In a small bowl, whisk together mayo, sriracha, honey, and lime juice to create the Bang Bang sauce. Taste and adjust as necessary.
  4. Set up a dredging station with three separate bowls: one for flour, one for beaten egg, and one for panko breadcrumbs.
  5. Dust the salmon pieces in flour, dip in the egg, and then roll in panko breadcrumbs until fully coated.
Cooking
  1. Arrange the coated salmon bites on the prepared baking sheet and bake for about 10 minutes, until golden brown and crisp.
  2. Drizzle the remaining Bang Bang sauce over the baked bites or serve it on the side for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven to retain crispiness. For a quicker method, consider using an air fryer.
