  • 2 lbs Chicken Breast Lean and protein-packed; a great base for your BBQ flavor.
  • 1 cup BBQ Sauce Use your favorite brand or a homemade version.
  • 4 cups Coleslaw Mix A blend of shredded cabbage and carrots.
  • 4 pieces Tortillas Flour or whole wheat; can substitute with lettuce wraps.
  • 1 medium Sliced Avocado Adds creaminess and healthy fats.
  • 1/2 cup Fresh Cilantro Optional, but highly recommended for freshness.

Method
 

Cooking the Chicken
  1. Heat a skillet on medium heat and spray with cooking oil.
  2. Add the chicken breasts, cooking for about 5-7 minutes on each side until fully cooked.
Preparing the Chicken
  1. Remove chicken from the skillet and let it rest for a few minutes before shredding with two forks.
  2. In a bowl, combine the shredded chicken with BBQ sauce.
Coleslaw Preparation
  1. In a separate bowl, mix coleslaw with a drizzle of BBQ sauce if desired.
Final Assembly
  1. Lightly warm each tortilla on the skillet for a few seconds on each side.
  2. Place a scoop of BBQ chicken on the tortilla, followed by coleslaw and avocado slices.
  3. Fold the sides of the tortilla over the filling and roll it up tightly.
  4. Cut the wraps in half and serve with additional BBQ sauce on the side.

Notes

For a spicy twist, add jalapeƱos. Substitute chicken with pulled pork or mushrooms for a different flavor. Store leftovers separately in the fridge for up to 2 days.
