Cooking the Chicken
- Heat a skillet on medium heat and spray with cooking oil.
- Add the chicken breasts, cooking for about 5-7 minutes on each side until fully cooked.
Preparing the Chicken
- Remove chicken from the skillet and let it rest for a few minutes before shredding with two forks.
- In a bowl, combine the shredded chicken with BBQ sauce.
Coleslaw Preparation
- In a separate bowl, mix coleslaw with a drizzle of BBQ sauce if desired.
Final Assembly
- Lightly warm each tortilla on the skillet for a few seconds on each side.
- Place a scoop of BBQ chicken on the tortilla, followed by coleslaw and avocado slices.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Cut the wraps in half and serve with additional BBQ sauce on the side.
Notes
For a spicy twist, add jalapeƱos. Substitute chicken with pulled pork or mushrooms for a different flavor. Store leftovers separately in the fridge for up to 2 days.
