Preparation
- Trim excess fat from the pork shoulder and season generously with salt and pepper on all sides.
- Optionally, heat a skillet over medium-high heat and sear the pork shoulder on all sides until golden brown.
- In your slow cooker or Dutch oven, layer the sliced onion and minced garlic.
- Place the seasoned pork shoulder on top of the onion and garlic.
- Pour your BBQ sauce over the pork, ensuring it’s well-coated.
Cooking
- Cover and cook on low for 8 hours (or high for 4 hours). For oven, cook covered pot at 300°F for 4 hours.
- Once fall-apart tender, remove the pork from the pot and shred it using two forks.
- Return the shredded meat to the pot and mix it with the sauce for maximum flavor.
Assembly
- Lightly toast your buns until golden.
- Pile high some of the BBQ pulled pork on a bun and top with coleslaw if desired.
- Serve immediately with your favorite sides.
Notes
For a lighter version, use pork tenderloin instead. Save some BBQ sauce for reheat for flavor. Experiment with BBQ sauces to find your favorite!
