  • 3-4 lbs pork shoulder (or pork butt) Cut is richly marbled and shreds beautifully after slow cooking.
  • 1 cup BBQ sauce Can be store-bought or homemade. Substitute with vinegar-based sauce for tangy kick.
  • 1 medium onion, sliced Adds depth and sweetness; can use red onion for bolder taste.
  • 2 cloves garlic, minced Enhances the dish magnificently.
  • to taste salt and pepper Essential for flavor.
  • buns Choose favorite type - brioche, whole grain, or gluten-free.
  • coleslaw (optional) Adds extra crunch and fresh flavor.

Method
 

Preparation
  1. Trim excess fat from the pork shoulder and season generously with salt and pepper on all sides.
  2. Optionally, heat a skillet over medium-high heat and sear the pork shoulder on all sides until golden brown.
  3. In your slow cooker or Dutch oven, layer the sliced onion and minced garlic.
  4. Place the seasoned pork shoulder on top of the onion and garlic.
  5. Pour your BBQ sauce over the pork, ensuring it’s well-coated.
Cooking
  1. Cover and cook on low for 8 hours (or high for 4 hours). For oven, cook covered pot at 300°F for 4 hours.
  2. Once fall-apart tender, remove the pork from the pot and shred it using two forks.
  3. Return the shredded meat to the pot and mix it with the sauce for maximum flavor.
Assembly
  1. Lightly toast your buns until golden.
  2. Pile high some of the BBQ pulled pork on a bun and top with coleslaw if desired.
  3. Serve immediately with your favorite sides.

Notes

For a lighter version, use pork tenderloin instead. Save some BBQ sauce for reheat for flavor. Experiment with BBQ sauces to find your favorite!
