Preparation
  1. Thinly slice the beef against the grain.
  2. Chop the onion and mushrooms, and mince the garlic.
Cooking
  1. In a large skillet over medium-high heat, melt a tablespoon of butter. When hot, add the beef. Season with salt and pepper. Sauté until browned (about 3-4 minutes). Remove from the skillet and set aside.
  2. In the same skillet, add another tablespoon of butter. Sauté the onions and mushrooms until soft, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.
  3. Sprinkle the flour over the mixture in the skillet, stirring to coat. Gradually add the beef broth while stirring, ensuring no lumps form. Add Worcestershire sauce and season again with salt and pepper.
  4. Return the beef to the skillet once the sauce thickens (about 5 minutes). Lower the heat and stir in the sour cream, mixing until the sauce is creamy and heated through.
  5. Adjust seasoning if needed, and serve over cooked egg noodles or rice.

Notes

Healthier Option: Substitute Greek yogurt for sour cream for a lighter version without sacrificing creaminess. Add Greens: Consider adding fresh spinach or kale right before serving. Switch Up the Meat: Chicken or turkey can be used instead of beef. Fresh thyme or dill can add fragrance, or even a dash of nutmeg for warmth.
