- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine cottage cheese, honey, and vanilla extract. Mix well until smooth and creamy.
- Gently fold in the blueberries and the lemon zest, ensuring the berries stay whole.
- Gradually stir in almond flour until well combined. The mixture should hold together without being overly sticky.
- Using a small spoon or cookie scoop, scoop out tablespoons of the mixture onto a parchment-lined baking sheet, spaced slightly apart.
- Bake in the preheated oven for about 15 minutes, or until the edges are lightly golden and the tops are firm to touch.
- Allow the bites to cool for a few minutes on the baking sheet before transferring to a wire rack.
Notes
For extra creaminess, use full-fat cottage cheese. Ensure your blueberries are washed and dried to prevent excess moisture. These bites can also be made in a muffin tin for a quicker bake.
