Ingredients

Main Ingredients
  • 1 cup Cottage cheese The star ingredient, offering a creamy texture high in protein.
  • 1 cup Blueberries Fresh or frozen, these juicy gems bring sweetness and a gorgeous pop of color.
  • 1 tablespoon Lemon zest Adds a bright, zesty flavor that elevates the whole dish.
  • 2 tablespoons Honey or maple syrup For a touch of natural sweetness; substitute with agave nectar if preferred.
  • 1 teaspoon Vanilla extract Enhances the flavor profile and adds warmth.
  • 1 cup Almond flour Gluten-free option; can use oat flour or regular flour for nut-free.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine cottage cheese, honey, and vanilla extract. Mix well until smooth and creamy.
  3. Gently fold in the blueberries and the lemon zest, ensuring the berries stay whole.
  4. Gradually stir in almond flour until well combined. The mixture should hold together without being overly sticky.
  5. Using a small spoon or cookie scoop, scoop out tablespoons of the mixture onto a parchment-lined baking sheet, spaced slightly apart.
  6. Bake in the preheated oven for about 15 minutes, or until the edges are lightly golden and the tops are firm to touch.
  7. Allow the bites to cool for a few minutes on the baking sheet before transferring to a wire rack.

Notes

For extra creaminess, use full-fat cottage cheese. Ensure your blueberries are washed and dried to prevent excess moisture. These bites can also be made in a muffin tin for a quicker bake.
