Main Ingredients
  • 6 slices bacon Feel free to use turkey bacon or a vegetarian substitute.
  • 8 large eggs Adjust based on serving size.
  • 1 cup milk Whole milk works best, but any milk or dairy alternative will suffice.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper A sprinkle of spice to balance the richness.
  • 1 tablespoon garlic powder Fresh minced garlic works too!
  • 3 cups bread cubes Day-old bread is perfect for this.
  • 1 cup shredded cheese Cheddar is classic; consider Monterey Jack or feta for a twist.
  • 1/2 cup diced bell pepper Optional; can substitute with spinach.
  • Chopped fresh herbs Optional topping; consider chives or parsley.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and let it drain on paper towels, then crumble into bite-sized pieces.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  4. Stir in the bread cubes, crumbled bacon, bell pepper, and half of the cheese until everything is evenly coated in the egg mixture.
  5. Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top.
  6. Bake for 30-40 minutes or until the casserole is set and golden brown on top.
  7. Allow the casserole to cool slightly before slicing and serving.

Notes

To enjoy your casserole later, store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze it in portions. Reheat in the oven at 350°F (175°C) until warmed through.
