Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Cook the bacon in a skillet over medium heat until crispy. Remove and let it drain on paper towels, then crumble into bite-sized pieces.
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
- Stir in the bread cubes, crumbled bacon, bell pepper, and half of the cheese until everything is evenly coated in the egg mixture.
- Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top.
- Bake for 30-40 minutes or until the casserole is set and golden brown on top.
- Allow the casserole to cool slightly before slicing and serving.
Notes
To enjoy your casserole later, store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze it in portions. Reheat in the oven at 350°F (175°C) until warmed through.
