  • 8 oz pasta (any shape, recommended fettuccine) Cook until al dente.
  • 4 oz Brie cheese Remove the rind for a creamier finish.
Sautéed Ingredients
  • 4 strips bacon Crispy and flavorful; turkey bacon is a great alternative.
  • 1 medium onion (yellow or sweet) Thinly sliced.
  • 1 clove garlic Minced.
Cooking Essentials
  • 2 tablespoons unsalted butter For a rich base.
  • 1 tablespoon olive oil To keep the bacon crispy.
  • to taste Salt and pepper For seasoning.
Garnish
  • to taste Fresh parsley Optional, for garnish.

Method
 

Preparation
  1. Begin by boiling a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, add the diced bacon. Cook until it is crispy (about 5-7 minutes), stirring occasionally. Let it drain on a paper towel while leaving the rendered fat in the pan.
  3. In the same skillet, add the butter and olive oil. Once melted, add the sliced onions. Cook down for about 10 minutes until they become soft and golden brown.
  4. Stir in the minced garlic, cooking for an additional minute until fragrant.
Combining Ingredients
  1. Add the drained pasta to the skillet and mix well. Toss in the crispy bacon, then slowly add pieces of Brie, stirring gently until it melts and creates a creamy sauce.
  2. If needed, add reserved pasta water a little at a time for desired sauce consistency.
Final Touches
  1. Taste and season with salt and pepper.
  2. Transfer the pasta to serving plates, garnishing with freshly chopped parsley if desired.

Notes

If you have leftovers, they can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of water or a little more butter to maintain creaminess.
