  • 4 cups fresh broccoli florets You can use frozen broccoli if necessary; just thaw and drain well.
  • 2 cups sharp cheddar cheese Feel free to swap for a dairy-free cheese for a vegan version.
  • 1 cup heavy cream You can use almond milk or cashew cream for a lighter option.
  • 2 large eggs Replace with flax eggs for an egg-free alternative.
  • 1 cup breadcrumbs Use whole grain for added nutrients or gluten-free breadcrumbs if needed.
  • to taste salt and pepper Essential for seasoning to taste.
  • 1 teaspoon garlic powder Fresh minced garlic works well too.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the broccoli florets and half of the cheddar cheese, along with the garlic powder, salt, and pepper. Mix well.
  3. In another bowl, whisk the eggs and heavy cream together until smooth. Pour this mixture over the broccoli and cheese, making sure everything is coated.
  4. Transfer the mixture to a greased baking dish and spread it evenly. Top with the remaining cheddar cheese and sprinkle the breadcrumbs on top.
Baking
  1. Bake in the preheated oven for 30 minutes, or until the edges turn golden brown.
  2. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze individual portions for up to three months. Before serving, allow to cool for 5-10 minutes and consider adding fresh herbs on top.
