  3. In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt. Add cayenne if desired.
  4. Toss drumsticks with olive oil, then rub the brown sugar spice mix evenly over each piece.
  5. Wrap each drumstick with a slice of bacon, tucking the ends under the drum.
  6. Arrange the wrapped drumsticks on the wire rack, seam side down.
Cooking
  1. Bake for 25 minutes, then switch to broil for 3–5 minutes for extra caramelization, keeping a close eye to prevent burning.
  2. Use an instant-read thermometer to confirm the chicken is 165°F (74°C). Let rest for 5 minutes before serving.
