Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil and set a wire rack on top to let heat circulate and crisp the bacon.
- Pat drumsticks dry with paper towels to ensure seasoning and bacon adhere.
- In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt. Add cayenne if desired.
- Toss drumsticks with olive oil, then rub the brown sugar spice mix evenly over each piece.
- Wrap each drumstick with a slice of bacon, tucking the ends under the drum.
- Arrange the wrapped drumsticks on the wire rack, seam side down.
Cooking
- Bake for 25 minutes, then switch to broil for 3–5 minutes for extra caramelization, keeping a close eye to prevent burning.
- Use an instant-read thermometer to confirm the chicken is 165°F (74°C). Let rest for 5 minutes before serving.
Notes
For variations, try swapping brown sugar for maple syrup or using turkey bacon for a lighter option. Season ahead and refrigerate for stress-free entertaining.
