  • 6 large Eggs The heart and soul of your casserole.
  • 1 cup Milk Substitute with almond milk for a dairy-free version.
  • 1 cup Cheddar cheese, shredded Sharp or mild based on your preference.
  • 1 pound Breakfast sausage Cook and crumble; can substitute with turkey sausage or veggies.
  • 1/2 cup Bell peppers, diced For color and flavor.
  • 1/2 cup Onion, diced Enhances flavor.
  • to taste Salt and pepper Season to taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) while you gather your other ingredients.
  2. In a large skillet, cook the sausage over medium heat until browned, breaking it apart as it cooks.
  3. Add the diced onions and bell peppers, sautéing until the vegetables soften, about 5 minutes.
  4. In a mixing bowl, whisk together the eggs and milk, seasoning with salt and pepper.
  5. Open the can of biscuits and cut each into quarters. Gently fold these into the egg mixture, along with the cooked sausage and sautéed veggies.
  6. Stir in cheddar cheese, reserving a bit for topping.
  7. Pour the mixture into a greased 9x13 inch baking dish. Sprinkle with the remaining cheese.
Baking
  1. Bake for 35-40 minutes, or until the casserole is golden on top and a toothpick inserted in the center comes out clean.
  2. Remove from the oven, allow to cool slightly, then serve warm.

Notes

You can customize this casserole by adding herbs, spices, or different vegetables. Prep it the night before for an easy breakfast option.
