Preparation
- Preheat your oven to 350°F (175°C) while you gather your other ingredients.
- In a large skillet, cook the sausage over medium heat until browned, breaking it apart as it cooks.
- Add the diced onions and bell peppers, sautéing until the vegetables soften, about 5 minutes.
- In a mixing bowl, whisk together the eggs and milk, seasoning with salt and pepper.
- Open the can of biscuits and cut each into quarters. Gently fold these into the egg mixture, along with the cooked sausage and sautéed veggies.
- Stir in cheddar cheese, reserving a bit for topping.
- Pour the mixture into a greased 9x13 inch baking dish. Sprinkle with the remaining cheese.
Baking
- Bake for 35-40 minutes, or until the casserole is golden on top and a toothpick inserted in the center comes out clean.
- Remove from the oven, allow to cool slightly, then serve warm.
