  • 1 cup all-purpose flour For a light, crispy coating; gluten-free flour can be swapped if needed.
  • 1 cup water Adjust as necessary to achieve the right batter consistency.
  • 1 cup buffalo sauce Choose your favorite brand for that perfect kick; homemade sauce works beautifully, too.
Seasonings
  • 1 teaspoon garlic powder For depth; feel free to use fresh minced garlic for a robust flavor.
  • 1 teaspoon onion powder Adds a subtle sweetness; can be omitted if desired.

Method
 

Preparation
  1. Remove the leaves and stem from the cauliflower, and cut it into bite-sized florets.
  2. In a large bowl, whisk together the flour, water, garlic powder, onion powder, salt, and pepper until smooth.
  3. Toss the cauliflower florets in the batter until evenly coated.
Cooking
  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. Spread the battered cauliflower in a single layer on the sheet and bake for 20 minutes until golden and crispy.
  3. While the cauliflower bakes, heat your buffalo sauce in a small saucepan over medium heat.
  4. Once the cauliflower is ready, toss it gently in the warm sauce and return to the oven for another 10 minutes.

Notes

If you’re lucky enough to have leftovers, store them in an airtight container in the fridge for up to 3 days. They can also be frozen for later enjoyment—simply thaw before reheating.
