  • 1 lb Chicken Breast Tender and juicy, diced for cooking.
  • 1/2 cup Buffalo Sauce Use your favorite brand or homemade.
  • 1 cup Brown Rice or Quinoa Cooked according to package instructions.
  • 1 cup Bell Peppers Chopped, colorful and crunchy.
  • 1/2 cup Red Onion Chopped for flavor.
  • 1/4 cup Ranch or Blue Cheese Dressing For drizzling on top.
  • 2 stalks Green Onions Chopped for garnish.
  • 1/2 cup Cheese Shredded cheddar or mozzarella (optional).
  • 1 medium Avocado Sliced or mashed (optional).

Method
 

Cooking Preparation
  1. Cook the grains according to package instructions to create a fluffy base.
  2. Heat a skillet over medium-high heat. Dice the chicken breast and add to the skillet. Cook until browned and fully cooked, around 5-7 minutes.
  3. Once chicken is cooked, pour in the buffalo sauce and toss to coat the chicken. Cook an additional 2-3 minutes until sauce thickens.
  4. While the chicken is cooking, chop the bell peppers and red onion. Sauté in a separate pan until tender but still crispy, about 4-5 minutes.
  5. Assemble the bowls by starting with a scoop of brown rice or quinoa, topping it with the buffalo chicken mixture and sautéed vegetables.
  6. Drizzle with ranch or blue cheese dressing, sprinkle with green onions, and add cheese or avocado if desired.
  7. Serve immediately and enjoy with family.

Notes
