Ingredients
  

Pasta and Chicken
  • 8 oz your favorite pasta (penne or rotini)
  • 2 cups shredded rotisserie chicken Leftover chicken can be used.
Sauce Ingredients
  • 1 cup buffalo sauce Choose your favorite brand.
  • 4 oz cream cheese, softened Can be replaced with Greek yogurt for a lighter option.
  • 1/2 cup sour cream Can be swapped for crème fraîche.
  • 2 cloves garlic, minced Freshly minced elevates the flavor.
  • 1 cup shredded cheddar cheese Adds creaminess.
Garnish
  • to taste Chives or Green Onions For garnish.

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water. Add your pasta and cook according to package directions until al dente. Drain and set aside.
Preparing the Sauce
  1. In a large skillet over medium heat, melt a tablespoon of oil. Add minced garlic and sauté for about 1 minute, until fragrant.
  2. Lower the heat and stir in shredded chicken, buffalo sauce, cream cheese, and sour cream. Stir until everything is well combined and creamy.
Combining Ingredients
  1. Gently fold the cooked pasta into the buffalo chicken mixture. Stir until all the pasta is coated in the sauce.
  2. Sprinkle in the shredded cheddar cheese and stir until melted and creamy.

Notes

For extra nutrition, add veggies like spinach or broccoli. For a spicier flavor, increase the buffalo sauce or add crushed red pepper flakes. It also works great baked with extra cheese on top.
