  • 1 tsp Pepper To taste.
  • 2 tbsp Olive oil For sautéing.
  • 1 medium Onion, chopped For sweetness and depth.
  • 2 cloves Garlic, minced For aroma.
  • 1 cup Bell peppers, diced For crunch and color.
  • 1 cup Cherry tomatoes, halved For juiciness.
  • 4 cups Romaine lettuce As the base.
Toppings
  • to taste Shredded cheese Optional.
  • to taste Pickles Optional.
  • to taste Sauce or dressing For added zing.

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent, about 3 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
Cooking
  1. Add ground beef, season with salt and pepper, and cook, breaking it apart, until browned and cooked through, around 5-7 minutes.
  2. Toss in diced bell peppers and halved cherry tomatoes, cooking for another 3-4 minutes until everything is bright and slightly tender but still crisp.
Assembly
  1. Place a handful of romaine lettuce in each bowl, top with the beef mixture, and sprinkle with your choice of toppings.
  2. Drizzle with dressing or sauce if desired.

Notes

For a vegetarian version, substitute ground beef with lentils or quinoa. Easily add seasonal vegetables or make it spicy with jalapeños.
