Preparation
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent, about 3 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
Cooking
- Add ground beef, season with salt and pepper, and cook, breaking it apart, until browned and cooked through, around 5-7 minutes.
- Toss in diced bell peppers and halved cherry tomatoes, cooking for another 3-4 minutes until everything is bright and slightly tender but still crisp.
Assembly
- Place a handful of romaine lettuce in each bowl, top with the beef mixture, and sprinkle with your choice of toppings.
- Drizzle with dressing or sauce if desired.
Notes
For a vegetarian version, substitute ground beef with lentils or quinoa. Easily add seasonal vegetables or make it spicy with jalapeños.
