Preparation
- Preheat your oven to 350°F (175°C) and grease a large baking dish with cooking spray.
- In a skillet, brown the ground beef over medium heat, breaking it apart as it cooks.
- Add the diced onion and minced garlic to the skillet, stirring until softened.
- Mix in the cooked rice, diced tomatoes, and seasonings, allowing the flavors to meld.
- In a separate pot, blanch the cabbage leaves in boiling water for about 2 minutes until slightly tender.
Assembly
- Layer half the cabbage at the bottom of your baking dish, followed by the beef mixture.
- Top with the remaining cabbage and sprinkle generously with cheese.
Baking
- Cover with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, allowing the cheese to bubble and turn golden.
Notes
Swap out the ground beef for ground turkey or chicken for a lighter option. Add your favorite veggies for extra nutrients or spice it up with red pepper flakes. It can be made ahead and stored in the fridge before baking.
