Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with cooking spray.
  2. In a skillet, brown the ground beef over medium heat, breaking it apart as it cooks.
  3. Add the diced onion and minced garlic to the skillet, stirring until softened.
  4. Mix in the cooked rice, diced tomatoes, and seasonings, allowing the flavors to meld.
  5. In a separate pot, blanch the cabbage leaves in boiling water for about 2 minutes until slightly tender.
Assembly
  1. Layer half the cabbage at the bottom of your baking dish, followed by the beef mixture.
  2. Top with the remaining cabbage and sprinkle generously with cheese.
Baking
  1. Cover with foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and bake for an additional 10 minutes, allowing the cheese to bubble and turn golden.

Notes

Swap out the ground beef for ground turkey or chicken for a lighter option. Add your favorite veggies for extra nutrients or spice it up with red pepper flakes. It can be made ahead and stored in the fridge before baking.
