- Start by boiling a large pot of salted water. Cook your pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
- Toss in chopped onions and bell peppers, cooking until they soften, around 3-4 minutes.
- Add minced garlic to the skillet and cook for another minute, stirring frequently.
- Pour in the heavy cream and sprinkle with Cajun seasoning, stirring to combine. Let it simmer for 2-3 minutes until slightly thickened.
- Add the cooked pasta to the skillet, stirring well to ensure every noodle is coated with that delicious creamy sauce.
- Mix in grated Parmesan cheese, allowing it to melt into the sauce. Taste and season with salt and pepper as needed.
- Plate the pasta and top with extra Parmesan and fresh parsley if desired.
