Preparation
- Slice the onions thinly, about a quarter-inch thick.
- In a large skillet, heat the olive oil and butter over medium heat until melted and bubbly.
Caramelization
- Add the sliced onions to the skillet, stirring frequently. Cook them for about 15–20 minutes or until they are golden brown and fully caramelized.
Mixing the Dip
- In a separate bowl, combine the sour cream, cream cheese, garlic powder, and a pinch of salt and pepper. Mix until well-combined and smooth.
- Once the onions are caramelized, remove them from heat and let them cool slightly. Then, fold the onions into the cream mixture until evenly distributed.
Serving
- Transfer the dip to a lovely serving bowl and sprinkle fresh herbs on top if desired. Best enjoyed warm with chips or fresh veggies.
Notes
You can prepare the dip a day in advance. Store it in the fridge and reheat before serving. For a healthier option, swap sour cream with Greek yogurt or use a dairy-free cream cheese for a vegan version.
