Pasta and Sauce Base
  • 1 lb Pasta (spaghetti or fettuccine) Choose your favorite shape; the key is to use something that holds sauce well.
  • 4-6 cloves Fresh garlic Durably aromatic, it’s a staple for depth and character.
  • 4 tablespoons Butter For richness. Swap for olive oil if you prefer a healthier option.
  • 1 cup Heavy cream This creates a luscious sauce. Substitute with half-and-half for a lighter version.
  • 1 cup Parmesan cheese Freshly grated gives the best flavor. Pecorino Romano can also work nicely!
  • Salt and pepper Essential for seasoning and bringing out the flavors.
Garnish
  • Fresh parsley Brightens up the dish with color and freshness.

Cooking Instructions
  1. Start by bringing a large pot of salted water to a rolling boil for the pasta.
  2. Add your choice of pasta and cook according to package instructions until al dente.
  3. While the pasta cooks, melt butter in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Lower the heat and pour in the heavy cream, stirring to combine. Let it simmer to thicken slightly.
  5. Gradually stir in the grated Parmesan cheese, allowing it to melt into the sauce. Season with salt and pepper.
  6. Once your pasta is done, reserve a cup of pasta water and drain the rest. Add the pasta directly to the sauce and toss gently to coat.
  7. Serve right away, garnished with freshly chopped parsley and an extra sprinkle of Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For longer storage, freeze the sauce (without pasta) in a freezer-safe container for up to three months.
