Preparation
- Preheat your oven to 350°F (175°C).
- Peel and slice the potatoes into thin rounds.
- In a large skillet over medium heat, brown the ground beef along with the diced onion for 8-10 minutes until fully cooked.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cream of mushroom soup and sour cream to the beef mixture. Season with salt and pepper, then mix until creamy and smooth.
- In a greased 9×13 inch baking dish, layer half of the sliced potatoes at the bottom, followed by half of the beef mixture, and sprinkle with a cup of cheddar cheese. Repeat the layers and finish with cheese on top.
Baking
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
- Let it sit for about 5 minutes to set before serving.
Notes
For a healthier option, substitute half the potatoes with steamed cauliflower. Add a layer of steamed broccoli or spinach for added nutrition. Spice it up with a dash of hot sauce or your favorite seasoning blend.
