Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice in chicken broth according to package instructions.
  3. In a large skillet, brown the ground beef over medium heat. Add diced onion and minced garlic, cooking until fragrant, about 5 minutes.
  4. Season with salt, pepper, and paprika. Toss in optional bell peppers and sauté until tender.
  5. Combine the cooked rice with the meat mixture in a large bowl, stirring to blend evenly.
  6. Transfer to a baking dish, spreading evenly. Top with a generous layer of shredded cheese.
  7. Bake for 20-25 minutes or until the cheese is melted and bubbly.

Notes

This casserole is fantastic for meal prep! Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze portions for up to 3 months; just make sure to let it cool completely before sealing. Reheat in the oven or microwave until warmed through. Don’t overcook the rice; slightly undercooked rice will absorb flavors while baking.
