Preparation
- Preheat your oven to 375°F (190°C).
- Wash and peel the potatoes. Slice them thinly—about 1/8 inch thick.
- In a saucepan, melt the butter over medium heat. Add the minced garlic and allow it to sizzle for about 1-2 minutes.
- In a mixing bowl, combine the sliced potatoes with the melted garlic butter, salt, and pepper until well-coated.
- In a separate bowl, mix together the sour cream and 1 cup of cheddar cheese until smooth.
- In a greased 9x13-inch baking dish, layer half of the potato mixture on the bottom. Then pour half of the cheese mixture over the potatoes.
- Repeat with the remaining potatoes and cheese mixture.
Cooking
- Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and sprinkle the remaining cup of cheddar cheese on top.
- Bake uncovered for an additional 20 minutes, or until the cheese is bubbly and golden brown.
- Once done, let the dish cool for about 10 minutes and garnish with chopped chives.
- Serve warm!
Notes
Consider adding cooked bacon bits or sautéed vegetables for extra flavor. Experiment with different herbs and cheeses to personalize the dish.
