Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the potatoes. Slice them thinly—about 1/8 inch thick.
  3. In a saucepan, melt the butter over medium heat. Add the minced garlic and allow it to sizzle for about 1-2 minutes.
  4. In a mixing bowl, combine the sliced potatoes with the melted garlic butter, salt, and pepper until well-coated.
  5. In a separate bowl, mix together the sour cream and 1 cup of cheddar cheese until smooth.
  6. In a greased 9x13-inch baking dish, layer half of the potato mixture on the bottom. Then pour half of the cheese mixture over the potatoes.
  7. Repeat with the remaining potatoes and cheese mixture.
Cooking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.
  2. After 40 minutes, remove the foil and sprinkle the remaining cup of cheddar cheese on top.
  3. Bake uncovered for an additional 20 minutes, or until the cheese is bubbly and golden brown.
  4. Once done, let the dish cool for about 10 minutes and garnish with chopped chives.
  5. Serve warm!

Notes

Consider adding cooked bacon bits or sautéed vegetables for extra flavor. Experiment with different herbs and cheeses to personalize the dish.
