  • 2 cloves Garlic Minced.

Preparation
  1. Peel and dice the potatoes, and chop the onion and garlic.
Cooking
  1. In a large pot, add a drizzle of olive oil and sauté the onions and garlic until translucent.
  2. Add the diced potatoes and broth to the pot, bring to a boil, then reduce heat and simmer until the potatoes are fork-tender, about 15 minutes.
  3. Use an immersion blender to purée the soup until you reach your desired consistency.
  4. Stir in the cream and cheese until melted. Adjust seasoning with salt and pepper.
  5. Ladle the soup into bowls and garnish with your favorite toppings.

Notes

Consider adding vegetables like broccoli or carrots for extra nutrition, or a pinch of cayenne for a spicy kick. Top with crispy bacon bits, croutons, or a dollop of sour cream.
