  1. Start by mincing the garlic and gathering all your ingredients. It’s helpful to have everything ready to go.
Cooking
  1. In a medium saucepan over medium heat, cube the Velveeta cheese and place it in the pan. Stir occasionally as it begins to melt.
  2. Once the cheese has softened, add the can of Rotel (with all its juices).
  3. Stir in the cup of sour cream until well incorporated.
  4. Add the shredded cheddar and minced garlic, stirring until all the cheese is melted and the mixture is creamy.
  5. Taste and adjust; mix in any additional jalapeños or other seasonings if desired.
  6. Once melted and gooey, transfer the dip to a serving bowl.

Notes

Consider using low-fat cheese for a healthier dip. During fall, add pumpkin puree; in summer, incorporate fresh corn. Experiment with spices like cumin or smoked paprika.
