- In a medium saucepan over medium heat, cube the Velveeta cheese and place it in the pan. Stir occasionally as it begins to melt.
- Once the cheese has softened, add the can of Rotel (with all its juices).
- Stir in the cup of sour cream until well incorporated.
- Add the shredded cheddar and minced garlic, stirring until all the cheese is melted and the mixture is creamy.
- Taste and adjust; mix in any additional jalapeños or other seasonings if desired.
- Once melted and gooey, transfer the dip to a serving bowl.
Notes
Consider using low-fat cheese for a healthier dip. During fall, add pumpkin puree; in summer, incorporate fresh corn. Experiment with spices like cumin or smoked paprika.
