- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage. Use a wooden spoon to break it apart as it cooks. Cook until it’s browned and cooked through, about 5-7 minutes.
- Stir in the diced onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic, stirring constantly until fragrant—about 1 minute.
- Add the broccoli florets to the skillet. Pour in a splash of water to help steam the broccoli. Cover and cook for another 4-5 minutes, until it’s vibrant and tender-crisp.
- Sprinkle the shredded cheddar cheese over the top of the mixture. Reduce the heat to low, cover, and let it sit for 2-3 minutes until the cheese melts.
- Season with salt, pepper, and red pepper flakes to taste. Stir everything together and serve hot.

Variations include adding diced jalapeños for spice, incorporating bell peppers or spinach for added nutrients, or serving over rice or quinoa for a heartier meal.
