Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (penne or fusilli) Feel free to swap for whole wheat for a healthier option.
  • 2 cups broccoli florets Fresh is best, but frozen will do in a pinch.
Chicken
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
Seasonings and Oils
  • 3 cloves garlic, minced Fresh is always better, but pre-minced can save you time.
  • 2 tbsp olive oil Or any neutral oil you prefer.
  • ¼ cup chicken broth Homemade or store-bought.
  • ½ tsp crushed red pepper flakes Optional, for a little kick.
  • Salt and pepper To taste.
  • Grated Parmesan cheese For serving.

Method
 

Preparation of Pasta
  1. Cook the pasta according to the package instructions in a large pot of salted boiling water. Aim for al dente perfection, as it will cook a bit more later. Add the broccoli florets to the water during the last 2 minutes of cooking.
  2. Drain and set aside.
Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
  2. Once the chicken is cooked, stir in the minced garlic and crushed red pepper flakes. Sauté for about 1 minute, just until the garlic is fragrant.
Combining Ingredients
  1. Pour in the chicken broth and stir to combine.
  2. Add the cooked pasta and broccoli to the skillet, tossing everything together gently so that each piece is coated in delicious, garlicky goodness.
  3. Allow the pasta to warm through for an additional 2-3 minutes. Taste and adjust seasoning as necessary.
Serving
  1. Plate your Chicken and Broccoli Pasta and generously sprinkle with grated Parmesan cheese before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently, adding a splash of chicken broth if needed.
