Preparation
- Slice the chicken into bite-sized pieces and chop the broccoli into florets.
Cooking
- Heat a large skillet or wok on medium-high heat. Add a splash of sesame oil.
- Once hot, add the chicken pieces. Sauté for about 5-7 minutes until golden and cooked through.
- Add the minced garlic and stir for about 30 seconds until fragrant.
- Toss in the broccoli and bell peppers (if using), cooking for another 3-4 minutes until they are tender yet crunchy.
- In a small bowl, whisk together soy sauce and cornstarch with a bit of water until smooth. Pour this mixture into your skillet, stirring well to coat all the ingredients.
- Cook for an additional 2-3 minutes until everything is thickened and glistening.
- Serve immediately, garnished with chopped green onions.
Notes
Tips: Add red pepper flakes for a bit of spice or serve it over brown rice/quinoa for a filling meal. Store leftovers in an airtight container for up to 3 days in the fridge.
