Ingredients
  

For the Chicken
  • 1 pound Chicken breast You can use thighs for a juicier option.
  • 2 tablespoons Olive oil For marinating and cooking.
  • 1 teaspoon Garlic powder Fresh minced garlic works wonderfully too.
  • 1 teaspoon Paprika Try smoked paprika for an extra kick.
For the Tzatziki
  • 1 medium Cucumber, grated Substitute with zucchini if needed.
  • 1 cup Greek yogurt Use dairy-free yogurt for a vegan option.
  • 1 tablespoon Lemon juice Lime works in a pinch.
  • 1 tablespoon Fresh dill, chopped Mint or parsley can be used as alternatives.
For the Veggies
  • 1 cup Bell peppers, chopped Add color and crunch.
  • 1 cup Cherry tomatoes, halved Add color and crunch.
  • 1/2 medium Red onion, chopped Add color and crunch.

Method
 

Preparation
  1. In a large bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Toss in the chicken breast, ensuring it is fully coated. Let it marinate for about 10 minutes while you prep other ingredients.
  2. In a separate bowl, mix grated cucumber, Greek yogurt, lemon juice, and fresh dill. Add salt and pepper to taste, adjusting as necessary. Set it aside to allow the flavors to meld.
  3. While the chicken marinates, chop your desired veggies: bell peppers, cherry tomatoes, and red onions.
Cooking
  1. Heat a skillet over medium-high heat and add the marinated chicken. Cook for 5-7 minutes on each side until golden brown and fully cooked (internal temperature of 165°F/75°C).
Assembly
  1. Slice the cooked chicken and layer it on a bed of chopped veggies. Drizzle generously with the tzatziki sauce.
  2. Finish off with a sprig of fresh dill and a squeeze of lemon juice, if desired.

Notes

Store leftovers in separate airtight containers for up to 3 days. The chicken can be frozen for up to 2 months.
