Preparation
- In a large bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Toss in the chicken breast, ensuring it is fully coated. Let it marinate for about 10 minutes while you prep other ingredients.
- In a separate bowl, mix grated cucumber, Greek yogurt, lemon juice, and fresh dill. Add salt and pepper to taste, adjusting as necessary. Set it aside to allow the flavors to meld.
- While the chicken marinates, chop your desired veggies: bell peppers, cherry tomatoes, and red onions.
Cooking
- Heat a skillet over medium-high heat and add the marinated chicken. Cook for 5-7 minutes on each side until golden brown and fully cooked (internal temperature of 165°F/75°C).
Assembly
- Slice the cooked chicken and layer it on a bed of chopped veggies. Drizzle generously with the tzatziki sauce.
- Finish off with a sprig of fresh dill and a squeeze of lemon juice, if desired.
