Vegetables

Method
 

Marination
  1. In a large bowl, whisk together olive oil, soy sauce, minced garlic, lemon juice, salt, and pepper.
  2. Add the chicken, ensuring each piece is coated. Cover and marinate for at least 15 minutes or up to 4 hours for deeper flavor.
Preparation
  1. While the chicken marinates, chop your bell peppers and red onion into uniform chunks to ensure even cooking.
Assembly
  1. Thread the marinated chicken, bell peppers, and onions onto skewers. Alternate between chicken and vegetables for a colorful presentation.
Grilling
  1. If using a charcoal grill, allow it to heat until the coals are ashen. For gas grills, preheat on medium-high.
  2. Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
Serving
  1. Remove from the grill and let rest for 5 minutes. Serve warm with your favorite dipping sauce or over a bed of rice.

Notes
