Pasta and Chicken
  • 8 ounces pasta (penne or fettuccine) Works best for this recipe
  • 1 pound boneless, skinless chicken breasts Cut into bite-sized pieces
Vegetables
  • 2 cups seasonal vegetables Can include bell peppers, zucchini, asparagus, and cherry tomatoes
Cooking Essentials
  • 3 tablespoons olive oil Plus more for drizzling
  • 3 cloves garlic Minced
  • 1 teaspoon Italian seasoning Or fresh herbs like basil or oregano
  • to taste Salt and pepper
  • Grated Parmesan cheese For serving (optional but recommended)

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water and then drain the rest. Set aside.
Sautéing the Chicken
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning, and sauté until cooked through, about 5-7 minutes.
Adding the Vegetables
  1. Stir in the garlic and the assorted seasonal vegetables. Cook for another 4-5 minutes, until the veggies become tender yet still colorful and vibrant.
Combining Pasta and Sauce
  1. Add the drained pasta to the skillet along with the reserved pasta water. Toss everything together gently, allowing the pasta to soak up the delicious flavors. Drizzle remaining olive oil and adjust seasonings as needed.
Serving
  1. Serve your Chicken Pasta Primavera warm, topped with a generous sprinkle of grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, portion out the pasta in freezer-safe containers for up to 2 months. Reheat gently on the stovetop with a splash of water or olive oil.
