  • 9 pieces Lasagna noodles Use traditional or no-boil varieties
  • 2 cups Marinara sauce Homemade or store-bought
Filling
  • 2 cups Cooked chicken Shredded or diced; rotisserie chicken works well
  • 4 cups Fresh spinach Nutrient-packed green
  • 15 ounces Ricotta cheese Substitute with cottage cheese for a lighter option
  • 1 large Egg Helps to bind the filling together; can substitute with flaxseed meal
  • 2 cups Mozzarella cheese Shredded for easy melting
  • 0.5 cups Parmesan cheese Adds nutty flavor; use nutritional yeast for a dairy-free option
Aromatics
  • 2 cloves Garlic Minced for flavor
  • 1 medium Onion Chopped for aromatic base

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the ricotta cheese, egg, half of the mozzarella, and Parmesan. Stir in the cooked chicken, spinach, and a dash of salt and pepper.
  3. Spread a layer of marinara sauce at the bottom of a baking dish.
  4. Layer 3-4 lasagna noodles over the sauce, ensuring they cover the entire base.
  5. Spread half of the chicken and spinach mixture over the noodles, followed by another layer of marinara sauce.
  6. Repeat the layering process: noodles, filling, and sauce until all ingredients are used, topping with the remaining mozzarella.
Baking
  1. Cover with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes, until the cheese is golden and bubbly.
  3. Let your lasagna cool for a few minutes before slicing.

Notes

Let the lasagna sit for about 10 minutes after baking to help the layers set. You may add a splash of white wine to the marinara sauce for added flavor.
